One of the great protagonists of contemporary Brazilian gastronomy, Carla Pernambuco built Carlota, in Higienópolis, one of the most enduring and relevant establishments in São Paulo. A member of the generation of chefs who, starting in the 1990s, helped renew the country's gastronomic scene, she brought international influences always filtered through local flavors and memories.
Before dedicating herself to the kitchen, she lived in New York and worked in areas such as theater and communication, experiences that help explain the breadth and sensitivity of her vision. At the helm of Carlota for almost three decades, she has developed a multicultural and heartfelt cuisine, where technique and repertoire coexist naturally.
Her career shows that longevity, when sustained by identity, not only withstands time but transforms into a signature.
